Confetti cake mix cookies are fun, festive, and perfect for baby showers and birthday parties. These are the easiest cookies to make since we are using a box of cake mix for the base. You can have a batch of cookies ready in less than 30 minutes.
If you have little bakers around the house, they are going to have a ball making these colorful cookies! Confetti cookies are great when you are short on time or when kids want to help out in the kitchen. They also make the best birthday cake cookies considering the sprinkles add so much flair. 🍰 Ingredients:
- Boxed Cake mix – we used Pillsbury Funfetti cake mix; you could use a white or yellow cake mix and just add the sprinkles.
- oil – vegetable oil is best when baking these cookies, it makes a moister and chewier cookie
- eggs – bring to room temperature first.
- sour cream – adds moisture to the batter and makes the best chewy cookies.
- rainbow sprinkles – you’ll want to use jimmies because they do not bleed into the cookie dough when baking like others do.

When it comes to a celebration, this easy cookie recipe goes great with cookie monster ice cream, mini ice cream sandwich pops, and birthday cake cheesecake bars.
Substitutions and Variations
- Extra sprinkles – for more color, add extra sprinkles on top of the cookies before baking.
- Frosting – if desired, use my Lofthouse copycat recipe and top with more sprinkles. A cream cheese frosting or strawberry frosting would be delicious as well. Do not frost warm cookies, wait until they have cooled.
- White chocolate chips – use up to ¾ cup.
- White cake mix – if you don’t have Funfetti mix, use a box of white cake mix and stir in a few more sprinkles, plus a teaspoon of vanilla extract or ½ teaspoon of almond extract.
- Strawberry cake mix cookies – swap the Funfetti for a box of strawberry cake mix.
🔪 Instructions:
PREP: Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
Step 1: Combine the dry cake mix, eggs, oil, and sour cream in a large bowl. Fold the sprinkles in using a wooden spoon or rubber spatula.
Step 2: Use a cookie scoop or tablespoon to drop the cookie dough balls onto the prepared baking sheets.
Step 3: Bake the cookies for 11 minutes until they have set and puffed up.
Pro Tip: We love how the confetti cookies from a box came out when only baking for 11 minutes. They were slightly undercooked but so soft and moist!
SERVE: Allow the chewy Funfetti cookies to cool for 1-2 minutes on the pan, then transfer to a wire rack to finish cooling.
Baking Tips for Confetti Cake Mix Cookies
- The soft texture will remind you of traditional sugar cookies, and they are ultra moist.
- For chewier cookies, bake for 11 minutes so they are slightly undercooked. They will fall just a bit when cooling. We find this cooking time makes the perfect cookies.
- If you like the cakey texture, bake for a couple minutes longer. This will also make them stay puffed, but you want to take them out before they are golden brown.
- Do not make the cake mixes the way it says to on the box. Instead use the other ingredients listed here and these instructions.
- Please note that different ovens cook slightly differently. I like to test just a couple cookies initially to make sure of my targeted bake time. For chewy cookies, look for just the slightest hint of browning around the bottom edge of the cookies and remove them before they overbake.

Keep leftover cookies in an airtight container in a single layer for up to 5 days.
It’s actually a white cake mix with sprinkles mixed into the dry ingredients. However, the signature Funfetti flavor is buttery and when I make it from scratch I add vanilla and almond extract.
Once the cookies have cooled, transfer them to a freezer bag. If desired, separate layers with parchment paper. You can also freeze the dough balls until solid, then when you are ready to bake, place them directly in the preheated oven. Adjust cook time accordingly.

Ingredients
- 15.25 oz. box of funfetti cake mix
- ⅓ cup vegetable oil
- 2 large eggs
- ⅓ cup sour cream
- ⅓ cup rainbow jimmies
Instructions
- Preheat the oven to 350°F.
- In a large mixing bowl, stir together the cake mix, oil, eggs, and sour cream until fully combined. Fold in rainbow jimmies until evenly distributed.
- Use a cookie dough scoop or tablespoon to drop the cookie dough in mounds onto a baking sheet lined with parchment paper. (We made 2 tablespoon size cookies.)
- Bake cookies for 11 minutes, until puffed and set.
- Allow cookies to cool for 1-2 minutes and then transfer to a cooling rack to cool completely.
