Old fashioned creamed corn is simmered in a velvety cream sauce, loaded with sweet corn kernels, and has a little black truffle oil that transforms an average delicious side dish, into one fit for the holiday table or other special occasion. Ready in just 15 minutes.
One thing about from scratch creamed corn is, once you taste it, you’ll never touch the canned version again! It’s such an easy side dish and also a great way to use up fresh corn if you have a bundle from the farmers markets. We always make it when we have stuffed pork chops or fried chicken, it’s pure comfort!
It’s also an excellent side dish idea for Thanksgiving dinner because it comes together so fast and you can even cook it in your crock pot to save room on the stove. 🌽 Ingredients:
- salted butter – if you use unsalted butter, you may to need to season more at the end.
- white onion – mince finely so they cook quicker and aren’t as noticeable in the final dish.
- crushed garlic – fresh or store bought minced garlic.
- all-purpose flour – thickens the creamy corn sauce.
- sea salt and coarse black pepper
- cream cheese – softening at room temperature before hand will make it easier to mix.
- whole milk – see the variations below for other options.
- granulated sugar – adjust based on the level of sweetness you prefer.
- frozen corn – white corn or yellow will work. Sometimes you can find a blend. You can also use fresh corn, sliced off the cobs.
- parmesan cheese
- black truffle oil – find this oil with the others at just about any grocery store.
- Fresh herbs – parsley, sage, or thyme are great garnishes.

Substitutions and Variations
- Fresh sweet corn – Slice the corn kernels off the ears of corn into a large bowl. You can also stick the corn cobs through the center of a bundt pan, which makes a quick job of removing the kernels.
- Heavy cream – can be used in place of ½ of the milk to make the cream corn sauce extra creamy.
- Lighter version – Substitute half and half and/or reduced fat milk for the whole milk.
- Spicy – add red pepper flakes or cayenne pepper. For a southwest style, use diced chiles or jalapeños.
🔪 Instructions:
Step 1: Sauté the butter and minced onions over medium-high heat until the onions are soft and translucent.
Step 2: Whisk in the garlic, flour, salt, and pepper. Cook for 1-2 minutes until the flour begins to toast.
Step 3: Add the cubed cream cheese and slowly pour the milk in, whisking constantly for a smooth sauce.
Step 4: Reduce the heat to medium and add the sugar and corn. Bring the corn mixture to a simmer. Simmer over low heat for 2-3 minutes or until the sauce begins to thicken. Remove from the stovetop.
Pro Tip: Stir often after adding the cream cheese and milk so the sauce gets nice and creamy. Avoid turning the heat up too high, or else it may scorch.
Step 5: Stir in the parmesan cheese until melted.
Step 6: Add 1 teaspoon of black truffle oil at a time until desired taste is reached. Remember that truffle oil is quite strong and too much can be overpowering. If you’re not familiar with truffle oil, you may even want to start with just a few drops.
Step 7: We shaved a few truffles on top just before serving.
SERVE: Garnish with fresh herbs, parmesan cheese, shaved truffles, or sea salt and pepper.
Recipe Tips for Creamed Corn
- This easy recipe works great in a cast iron skillet if you have one.
- Using black truffle oil takes this popular side dish to the next level. While it is a special ingredient, it adds an earthy flavor that most corn recipes don’t have.
- Summer truffles are cheaper and more readily available than winter truffles. You don’t have to add truffles as a garnish, but if you do, use a microplaner or zester to shave on top just before serving.
Fun Fact
Truffle oil should never be used for frying, as it quickly loses it’s flavor. It’s really meant as a finishing oil. -Mashed

Ingredients
- 2 tablespoons salted butter
- ¼ cup white onion finely diced
- 1 teaspoon crushed garlic
- 1 tablespoon all-purpose flour
- ½ teaspoon sea salt
- 1 teaspoon coarse black pepper
- 4 oz. cream cheese cut into cubes
- 1 cup whole milk
- 2 teaspoons granulated sugar
- 32 oz. bag of frozen whole kernel corn white or yellow
- ½ cup grated parmesan cheese
- 2 teaspoons black truffle oil
- Fresh herbs to garnish parsley, thyme, and/or sage
Instructions
- In a large skillet, saute butter and minced onions over medium heat until onions become translucent (3-4 minutes).
- Add the flour, garlic, salt and pepper to the skillet and cook for 1-2 minutes longer, until the flour begins to toast and turn slightly golden.
- Add the cream cheese to the pan and stir until melted. Slowly pour in the milk while whisking to form a smooth sauce.
- Add the corn and sugar to the sauce and heat over medium, heating the corn through, and bringing the mixture to a simmer.
- Simmer over medium low heat for 2-3 minutes, ensuring that the corn is hot and the sauce begins to thicken. Remove from heat.
- Stir in the parmesan cheese until melted.
- Add the truffle oil, 1 teaspoon at a time, tasting and adjusting the amount until desired flavor is achieved.
- Garnish with finely chopped fresh herbs and serve immediately.
- You can also garnish with freshly ground black pepper, flaked salt salt, freshly grated parmesan cheese, and/or shaved truffles.
