Cookie Monster Rice Krispie Treats are a fun twist on regular cereal treats. These are bright blue, with big googly eyes, and have large chunks of delicious chocolate Oreos and chocolate chip cookies in every bite.

We don’t need Halloween parties to enjoy a cookie monster Rice Krispie treat, however they are pretty festive! These were a big hit with my kids because they always loved that adorable cookie monster and you can’t find these at the store. But there are several ways you change things up for a regular monster theme or spooky party.
Keep the theme going, and serve these crispy treats with monster cookie ice cream and cookie monster cookies.

🍪 Ingredients:

- salted butter – if using unsalted, you may want to add a dash of salt.
- mini marshmallows – can also use large marshmallows, chop them in half to speed up melting.
- Blue food coloring – we like the gel based because you can use less to make more vibrant colors.
- Rice Krispies – or store brand puffed rice cereal.
- Cookies – we used Oreos and mini Chips Ahoy, Famous Amos and/or mini Oreos also work. A softer cookie might crumble when mixing into the Rice Krispie mixture, so choose crunch cookies.
- Eyeball candies – you can find these at the grocery store on the baking aisle or in most craft stores.

Top your best Rice Krispie treat recipe with more chopped cookies or drizzle with melted chocolate.
Substitutions and Variations
- Frosted version – if you want more of a uniform cookie monster face you can bake the rice krispies treats without dying them and omit the cookies. Once they have set and are cut into squares, use a can of blue frosting to ice over the top. For messy blue fur, use a spatula to lift the icing up as you are spreading or use a grass piping tip. Add the large candy eyes. To make Cookie Monster’s mouth, cut an Oreo in half, take the cookie apart, remove the filling, and stick it on the icing. It should be a half circle.
- Different colors – use this same recipe to make Halloween treats by dying the Rice Krispies orange, purple, and green. Apply the same concept for any holiday.
- Dipped – Rice Krispie treat monsters can also be dipped in melted candy melts, melted white chocolate chips, or melted chocolate wafers, then coated with more small cookie pieces before the chocolate sets.
- Other cookies – use your favorites, just make sure they are crispy since the melted marshmallow mixture is chewy. Mini Nutter Butters would also be delicious.
🔪 Instructions:

Step 1: Melt the butter over medium low heat in a large pot.

Step 2: Once melted, add the marshmallows and stir constantly until melted. Turn off the heat.

Step 3: Add the blue gel food coloring and stir. Add more until the desired color is reaching.

Step 4: Stir in the cereal and a cup of the cookie pieces.
Pro Tip: Use a greased spatula or a piece of parchment paper to make spreading the mixture into the pan less messy. You can also put butter on or nonstick baking spray on your fingers and press with your hands.

Step 5: Transfer the Rice Krispie mixture to a 9×13 baking pan, greased with nonstick spray or lined with parchment paper.

Step 6: Press the cereal mixture so it’s in an even layer, and immediately add more cookie pieces and the candy eyes before the treats cool so they will stick.

Step 7: Allow the monster Rice Krispies to cool completely.
SERVE: Slice into squares and serve.

Recipe Tips for Cookie Monster Rice Krispie Treats Recipe
- Don’t cook marshmallow mixture higher than medium heat or it may scorch.
- We have cut down on the amount of rice crispies in order to mix the cookie pieces in. If you want to omit the cookies then use 6 cups to make the classic Rice Krispie recipe.
- You can also double the recipe and use a cookie sheet instead; the cookie monster treats will be thinner.
- If desired, add vanilla or almond extract to the melted marshmallows. I’m a sucker for a little almond extract, so that’s one of my favorite extras.
- For extra thick Rice Krispy treats, use an 8×8 or 9×9 baking pan.
- We sliced ours into 12 bars, but you can make them smaller.
- To make spreading easier, use a piece of wax paper to flatten or a spatula greased with cooking spray.
- These fun treats are perfect for a Halloween party, a monster birthday party, or even a fun after-school snack. They are also great party favors for a Sesame Street party.

Recipe FAQs
Store Rice Krispie treats in an airtight container on the counter for up to 5 days. Freeze, wrapped individually in plastic wrap, for up to 3 months. They are best within the first 2-3 days.
Once they have set, the only way to fix hard cereal treats is by warming them in the microwave for a few seconds.
Usually the flavor is plain with blue dye and has crushed cookies. In terms of ice cream, it’s vanilla.

Cookie Monster Rice Krispie Treats
Ingredients
- 4 tablespoons salted butter
- 6 cups mini marshmallows
- Blue food coloring gel-based
- 4 cups Rice Krispies
- 1 cup cookies crushed (we used Oreos and mini Chips Ahoy), plus more for topping
- Eyeball candies
Instructions
- Melt butter in a large pot over medium-low heat.
- As soon as the butter has melted, add the mini marshmallows and cook, stirring continuously until the marshmallows are melted completely.
- Turn off the heat.
- Add a few drops of food coloring and stir in until desired color is achieved.
- Add Rice Krispies and 1 cup of cookie pieces and stir quickly, but gently, to coat everything with the marshmallow mixture.
- Transfer mixture to a 9×13 pan that has been greased or lined with parchment paper.
- Press the mixture into an even layer. Immediately top with more cookie pieces and candy eyeballs – do this before the Rice Krispie treats cool so that the toppings will stick to the warm marshmallow.
- Allow treats to cool completely, then cut into pieces and serve.
