This Ritz cracker dessert is full of buttery Ritz crackers and gooey marshmallows. You only need 3 simple ingredients to make this wonderful no bake dessert, and they only take 5 minutes to prep. Much like a Rice Krispie treat, these Ritz cracker treats are the perfect combination, making them a delicious sweet and salty indulgence.
We love making chocolate dipped peanut butter Ritz crackers during the holidays. The buttery saltiness of the crackers makes them a great base for all kinds of desserts. So we decided to put a spin on traditional Rice Krispie treats. This is an easy recipe that makes a nice afternoon snack, but also a delicious treat for parties and special occasions.
Another great recipe fitting for this time of year and doesn’t require the oven is my famous peanut butter lasagna. It’s layered with creamy peanut butter, has a cream cheese filling, and is filled with Nutter Butter sandwich cookies. Chocolate butterscotch haystacks, chocolate peanut butter fudge, and crockpot chocolate peanut clusters, along with these sticky treats make a great edible gift idea!

🧈 Ingredients:
- salted butter – if using unsalted butter you may want to add a pinch of salt.
- mini marshmallows – these mix the easiest, but you can also chop the large ones into quarters.
- Ritz crackers – as long as it’s a buttery cracker any brand will work. We do not recommend saltine crackers.

Optional Garnish:
Our Ritz cracker dessert can be drizzled with melted chocolate and sprinkled with colorful jimmies or topped with cracker crumbs depending on the holiday season.
Substitutions and Variations
- Add ins – fold in your favorite candies, toffee bits, white chocolate chips, or sprinkles.
- Thinner treats – use a baking sheet.
- Extracts – if desired add almond or vanilla extract to the marshmallows.
- Colored – use food coloring gel in the marshmallow butter mixture to change the colors for different holidays.
🔪 Instructions:
Step 1: In a large pot over medium low heat, melt the butter.
Step 2: Once the butter has melted, stir in the marshmallows. Continue stirring until they are melted completely.
Step 3: Turn off the heat. Fold the crackers in, leaving them whole or gently crushing. They will crumble as you stir.
Step 4: Transfer the cracker mixture to a greased square pan or one lined with parchment paper.
Pro Tip: Use a greased spatula to make spreading into the dish easier.
Step 5: Press into an even layer in the bottom of the pan and top with larger pieces of Ritz (larger Ritz on top look better, but otherwise make no difference to the recipe.)
Step 6: Allow the Ritz crispies to cool completely, then slice into squares.
Recipe Tips for Gooey Ritz Crispy Treats
- Heat the marshmallows and butter over low heat so they don’t scorch while cooking.
- The ultra flaky texture of the buttery crackers really shine. I didn’t crush the crackers much. They will break apart as you mix. If you crush them too much, you won’t see the layers of crackers, but crumbles instead.
- This is one of my favorite recipes when I need something fast. It’s also easy enough for kids to help.

Recipe FAQs
Keep leftovers in an airtight container on the counter up to 5 days. To freeze, wrap the treats individually in plastic wrap for up to 3 months. Keeping them in the refrigerator will make them hard to eat.

Ritz Cracker Dessert
Ingredients
- 6 tablespoons salted butter
- 16 oz. mini marshmallows
- 3 sleeves Ritz crackers about 96 crackers
Instructions
- Melt butter in a large pot over medium-low heat.
- As soon as the butter has melted, add the mini marshmallows and cook, stirring continuously until the marshmallows are melted completely.
- Turn off the heat.
- Add Ritz crackers. You can gently crush them while adding them or even leave them somewhat whole. They will crush as the mixture is stirred together.
- Transfer mixture to an 8×8 or 9×9 square pan that has been greased or lined with parchment paper.
- Press the mixture into an even layer. Top with some larger pieces of Ritz cracker, if desired (simply for aesthetics).
- Allow treats to cool completely, then cut into pieces and serve.
