It rained here last week. Just enough to make the air smell yummy and bring a couple cooler mornings. It made me excited for fall, so we ate pumpkin pancakes for dinner and I scoured the grocery store for some little pumpkins to use as décor (with no luck.) Then the relentless heat returned and popsicles continue to win out over pots of soup!
I oh-so-selflessly got the girls one of those quick popsicle makers last Easter. The thing is miraculous – you pre-freeze the mold, then pour in your popsicle contents and 5 minutes later, out pop your popsicles. It makes experimentation fun and gratification quick. My girls love candy corn, I love giving them fun treats. These candy corn popsicles were a smashing success and not just because the girls liked them – they are also SUPER HEALTHY!!
What we have here is plain yogurt mixed with honey or agave (they liked the agave sweetened ones better) on the bottom of the mold, 100% orange juice with a tad of food coloring in the middle, and 100% pineapple juice with a tad of food coloring as the final layer. Freeze them up and you’ve got candy corn on your popsicle stick! I’ve made these a few times – you totally don’t need to use food coloring – in fact, I really prefer not to add food coloring to my children’s food, but….if you wanted the colors to really pop in a picture, the food coloring brings out the natural colors in the juice. There is no need to add sugar. I used plain, nonfat Greek yogurt with a little natural sweetener mixed in. I let each layer freeze up for about 4-5 minutes before adding the next layer (I’m sure you could do this with traditional popsicle molds, too, it would just take more time). That’s it! Yummy!!
