Two-minute Breakfast Sandwich Recipe

October 22, 2015 by girlinspired Leave a Comment

Need a nearly instant and well-rounded healthy breakfast?  This breakfast sandwich recipe is going to change busy mornings for you!  Yep!  You can make one of these sandwiches in less than two minutes and be out the door with a filling, 200 calorie, nutrient packed breakfast.  Not only that, but the sandwich is delicious! Your whole family will thank you.

The trick to this speedy meal is microwave scrambled eggs!  Mix up your egg and cheese in a ramekin, pop it in the microwave, and 60 seconds later, you have a perfectly sized protein serving to stick into a breakfast sandwich!  We pair the egg with a sausage patty and a toasted English Muffin.  This combo is filling and delicious.  You can adjust for your own personal taste preference to make your own perfect breakfast sandwich.  Add some cheese or leave off the sausage.  Add in some leftover bacon or mix some spinach leaves and tomato into the eggs!  I hear this combo is great with some chopped turkey lunch meat – mix it right into the egg scramble before cooking!

three white ramekins, one with an egg, one with beaten egg mixed with cheese, and one with cooked egg mixture

Time for the specifics on whipping up this easy breakfast sandwich.  Crack the egg into a ramekin and give it a quick whisk with a fork.  Add cheese, chopped turkey meat, or veggies if you want.  You can also add salt and pepper to give it a little more flavor.  You don’t need any milk, butter, or oil.  Just the egg and seasonings.  So that takes about 10 seconds, yes?

Pop it in the microwave for 1 minute.  Experiment to figure out the correct setting for your microwave.  If there is still some runny egg, microwave it for 10-15 seconds longer.

While you’re mixing and cooking your egg, toast the English muffin.  Pop your sausage patty into the microwave to heat it – I like to buy the fully cooked, turkey sausage patties.  They’re relatively healthy, have decent flavor, and they heat up in 20-30 seconds, so it’s easy!  Sometimes, I cook up a big package of sausage patties and then they’re ready to go when I need one.  When the egg is done cooking, simply run a fork around the edge of the ramekin and pop out your egg scramble.  Breakfast done in two minutes – boom!

You can also do some meal prep when you have a bit more time and make a stack of breakfast sandwiches.  Wrap the sandwiches in plastic wrap and freeze.  Then, simply microwave when you’re ready for breakfast!
