Jello pops are a delicious no drip treat that are so easy to make using just 3 ingredients. The flavor combinations are endless and the hardest part is waiting for them to set!
Place jello powder and sugar in a medium bowl or large measuring cup.
Add 1 cup of boiling water and whisk until jello powder and sugar is completely dissolved.
Add 1 cup of cold water to the jello mixture and stir until combined.
Pour mixture into popsicle molds, leaving about ½” of space at the top of the mold for expansion. Secure lid and popsicle sticks. (if you are using a mold that doesn’t hold popsicle sticks in place, wait for the jello to firm up (1-2 hours) and then place the sticks into the popsicles to freeze the rest of the way.)
Freeze the popsicles for about 8 hours or until very firm.
Remove from the molds and place them on a sheet pan lined with parchment paper to store in the freezer or place in layers in a freezer-safe container or bag with parchment paper between popsicles to prevent them from sticking together.

Notes
Storage:Keep jello pops frozen until ready to serve. They will last about 2 months when stored in a freezer bag or container. Separate with parchment paper so they don't stick together. Notes:Before removing the molds, make sure the popsicles are frozen solid. Cover the excess jello with plastic wrap if you need to freeze in batches. Microwave it for 20-30 seconds if needed if it becomes too thick to pour in the molds. To layer different colors of jello, fill the molds partially and freeze for 1-2 hours until the jello has set. Then repeat with the next color. Loosen the popsicles by dipping the molds into warm water for a few seconds. Press up from the bottom if using silicone molds. For rainbow jello popsicles, choose your flavors. Divide the capacity of the mold by the number of colors. I used a heaping tablespoon of each. 1 recipe makes (6) 3.5 ounce popsicles in the same color. To make more, double or triple the ingredients. If making different colors, mix the gelatin in the different bowls.
