Beat the egg whites in a large bowl using a mixer until you have stiff foam and they are white.
Fold in the grated cheese until well-mixed.
Use a cookie scoop to make the cheese bites into 1.5 tablespoon size balls and place them on a baking sheet.
Chill for 30 minutes in the fridge.
While the cheese puffs are chilling, add at least 4 inches of oil to a Dutch oven or deep fryer. Heat oil over medium heat until it reaches 350 degrees.
Roll the small balls between your palms, but not too tight. You want them to stay light and airy.
Drop several into the oil at a time. Fry the cheese balls evenly on all sides until they are golden and crispy.
Remove the balls from the oil using a slotted spoon and place them on a plate that is layered with paper towels to soak up the excess oil. Serve.
