Carrot Cake Cookies (from Cake Mix)

Ingredients needed

– 15.25 oz. box of carrot cake cake mix –⅓ cup vegetable oil –2 large eggs –⅓ cup sour cream

CREAM CHEESE FROSTING:

– ½ cup unsalted butter softened –8 ounces cream cheese softened –3 cups powdered sugar –1 teaspoon vanilla extract –½ cup chopped walnuts

Preheat the oven to 350 degrees. In a large bowl, stir the cake mix, oil, sour cream, and eggs together.

Step 1:

Use a cookie scoop to make cookie dough balls and drop them on a parchment-lined cookie sheet.

Step 2:

Bake for 11 minutes or until they are puffed and set. Allow the cookies to cool for 1-2 minutes, then transfer them to a wire rack.

Step 3:

Beat the butter and cream cheese together. Then mix in the powdered sugar a cup at a time. Stir in the vanilla.

Step 4:

Spread the frosting over each cookie.

Step 5:

Sprinkle a few nuts on top of each cookie and serve.
