We kicked off the barbecue season this last weekend with one of our family favorites – Chicken Wings! It’s that time of year when the outdoors are calling and dinner on the barbecue is a frequent affair . When the weather starts heating up, I love making meals outside. Chicken wings are awesome because they cook quickly on the barbecue and the kids love anything miniature! so it’s a win-win. This recipe works great for regular chicken legs or boneless, skinless chicken breasts, too! You’re not going to believe how easy and delicious these are!
Barbecue Chicken Wings
1/2 cup soy sauce
1/2 cup olive oil
1 Tbl. honey
2-3 garlic cloves, pressed
Mix ingredients together and pour into a large bowl or plastic bag with 3-4 pounds of defrosted chicken wings (or other chicken pieces of your choice). Marinate chicken for several hours – the longer the better!
Heat your grill until it’s nice and hot. Remove the chicken from the marinade and place it on the grill. DISCARD extra marinade!!! Turn the heat down to med-low and close the lid. While your chicken is cooking, you’ll mix up a basting sauce in a separate container – and this is the ticket to the most delicious chicken!!
1/4 cup soy sauce
1/4 cup melted butter
2-3 teaspoons garlic salt
Whisk together soy sauce, butter, and garlic salt. When the chicken has browned on one side, flip each piece over. Use a pastry brush to lightly coat the cooked side of the chicken pieces with the basting sauce. Continue turning and basting the chicken until it is cooked through completely. Remove from the barbecue and…enjoy!!
