Smoothies that Kids Love

 Feeding young children can be a tricky thing.  Just when you think you’ve found their ***favorite*** food, they hate it.  Just when you have them convinced that healthy foods are delicious, a classmate turns their nose up and your kid won’t eat it any longer.  My girls are hungry seemingly every second of the day and it’s challenging to come up with enough variety to satisfy them all the time.  I don’t make separate meals for mealtime – they all get the same thing.  For dinner, they eat what we eat.  The only exception is when Graham and I want something spicy (or Thai takeout!!), then, I’ll make them a separate toned down version.  I spent about a year on a really restrictive diet (no grains, no sugar, no lactose) and one of the things that I started eating daily was smoothies.  The kids started drinking smoothies, too, and although I don’t make them every day anymore, when I do make them, I’m always making a batch to feed more than one!

Today I’m sharing my go-to recipe that everyone loves and it’s super healthy (the recipe is a single serving – double, triple, quadruple as you wish!!)

Smoothies Kids Love
1 very ripe banana
1/2 C. plain yogurt (make your own yogurt for lactose-free)
1 tsp. honey (more if you want it sweeter)
1-2 tsp. coconut oil
1/2-1 C. ice cubes
Blend ingredients in a blender until smooth – drink up!!
Variations include:  
  • add 1/2 C. ripe strawberries for a strawberry-banana version (this is my girls’ favorite). 
  • use honey vanilla greek yogurt in place of the yogurt and honey (slightly less healthy, but delicious)
  • add 1 Tbs. peanut butter or almond butter
  • For a special treat, add a little whipped cream and sprinkles on top and call it dessert!
Note:  the coconut oil has a lot of health benefits, but it solidifies in the cold smoothie – I don’t mind it, but leave it out if you do!!  Or blend it with the other ingredients before adding the ice.
I know there’s a whole world of smoothies out there, and lots of ways to add green veggies to your diet this way – my girls see green and won’t drink it, but we keep trying – who knows when their preferences will change again!

Mud Pie – Make it!!

Get ready to indulge in this delicious ice cream mud pie recipe that you can make and eat right at home! Mocha almond fudge ice cream meets buttery Oreo cookie crust in this indulgent pie complete with chocolate ganache, whipped cream, and toasted almonds.
mud pie with whipped cream border and chocolate drizzle/toasted almonds on top, sitting on doily and cream cake stand on blue polka dot tableclothI started making mud pie many years ago after our favorite restaurant that served it had shut down.  An Oreo cookie crust is my absolute favorite, but I love coffee almost as much.  This pie pairs the best flavors – coffee, chocolate, and roasted almonds – mmmmm!  The cookie crust is topped with a layer of rich chocolate ganache, then topped with coffee ice cream before popping into the freezer to get nice and solid.  Lightly sweetened whipped cream and roasted almonds top this delicious pie.

Mud Pie Ingredients:

  • 1/2 package of Oreo cookies – crushed (food processor works best)
  • 1/4 C. melted butter
  • 4 ounces chocolate chips
  • 2/3 C. heavy whipping cream
  • 1 container of coffee or mocha almond fudge ice cream
  • 1 cup heavy whipping cream – whipped with 2 T. powdered sugar to sweeten
  • almonds – chopped and roasted/toasted

 How to Make this Mud Pie Recipe:

Step 1:  Crush your Oreo cookies and mix together with the melted butter.  Press into a pie plate – I like to use the disposable tin plates because you can pop the pie out for serving and it leaves a pretty fluted edge along the crust.  Bake crust at 350 degrees for 10-15 minutes – it will start to smell yummy and get crispy.  Cool crust.  
Step 2:  Make chocolate ganache by heating 2/3 cup heavy cream.  Pour it over the chocolate chips, and then whisk the melty mixture until smooth.  Pour a 1/4-inch layer of ganache in the cooled cookie crust and spread across the bottom of the crust.  Chill in the freezer for 15 minutes.  
Step 3:  Meanwhile, set out the container of ice cream to soften – you want it soft enough to spread, but not melted.  Mound the ice cream into your chilled crust and spread gently into a domed pie shape.  Return to the freezer for at least 1 hour, or until ready to serve.  
Step 4:  Whip 1 cup of heavy cream and 1 tablespoon of powdered sugar until soft peaks form. Pipe whipped cream in the center and around the perimeter of the pie.  Drizzle warmed ganache over the top.  
Step 5:  Chop almonds and roast them at 350 degrees in the oven until they are browned and toasty.  Cool before sprinkling over the top of the pie.  Serve immediately.

Chocolate Kisses Cake

If you love chocolate, I’ve got a cake for you!!  And just in time for Valentine’s Day, it’s one covered in dark chocolate piped “kisses.”  As far as I’m concerned, the best fix for a chocolate craving is this Dark Chocolate Frosting slathered on a pile of cake.  Chocolate frosting doesn’t get better – this one’s rich, it’s thick, it’s shiny and gorgeous.  You can spread it out smooth or pipe it into swirls or kisses!

To make a chocolate kisses cake, you will need your cake layers, one recipe of dark chocolate frosting (double the recipe if you’re using the frosting to fill your layers, too),  a piping bag fitted with a coupler and #12 piping tip.
The directions couldn’t be easier.  Stack and fill your cake (click here for more detailed instructions on stacking and filling).  Then, fill your bag with frosting and start piping – you can start anywhere on the cake, you might want to start on a side (or even practice off the cake) to get the feel of it.  Holding your tip just off the cake layer, begin squeezing until the frosting has formed a small mound, then release pressure on the bag while swiftly lifting straight out from the cake.  You can make your “kisses” any size you like, but you should try to make them a consistent size.  Cover the whole cake, fitting each “kiss” up against those around it.  They won’t all be perfect and that is just fine – once the cake is done, any imperfections will blend seamlessly together.  If you really flop on one of the kisses, just scrape that part away with a knife and continue!  So easy and such pretty results!
As far as the inside of the cake, I used a cool checkerboard pan set from Wilton and the results were easy and fun!
My inspiration for this kisses cake came my friend and baker extraordinaire, Emily.  That girl is seriously AMAZING!!  She makes the most delicious sweets and has true creative genius.

This dress is an ideal choice for someone looking for a cute, fairly easy pattern that is quick to download, print out, and get sewing with! The pattern pieces are minimal (no taping together required) and the instructions are super straightforward. If you read Shannon’s blog, you’ll feel right at home following her pattern! The pictures are clear and helpful.

 
I think this dress pattern is perfect for showcasing a really cute printed fabric.  The heart cutout on the back adds interest to the design so that the rest of the dress can just show off the fabric.  I chose this absolutely adorable Pernilla’s Journey Cotton Candy elephant fabric by Tina Givens for Free Spirit.  I had only one yard, which is less that the fabric requirements, but I was able to reduce the width of the skirt pieces just a tad and squeeze out the whole dress in a 4T with just the one yard.  Sweet!!
 
I tied a little ribbon around the waist for a splash of contrast and made a quick matching headband.  I think these little details are easy to do and add a nice finish to this sweet dress.
As far as the little model is concerned, this dress makes her feel super glamorous…and very much in the mood for twirling…and smiling.

little cups of love

Have I mentioned that we like sweets around here?  Just a little bit.  What to have for Valentine’s Day dessert then – how about some little cups of love?  Aren’t they so cute and scrumptious looking? 
   (The chocolate shells for these little cups of love were created while I was worrying over my little Kindergartener after a rough morning last week.  I was too worried to do anything productive so I just fiddled with chocolate – I mean, really, chocolate will make anything better!)
Little Cups of Love

Supplies:
dark chocolate candy melts and white candy melts
silicone baking cups
paper hearts
custard (I used this recipe.)
strawberries, if you want.

How to:
1.  Heat candy melts in a microwave-safe bowl or Ziploc baggy for 30 seconds at a time, stirring between, until completely melted. 
2.  Spoon 2-3 teaspoons of melted candy into the silicone baking cup and swirl to coat the interior of the cup.  Let cool.
3.  Gently peel the silicone cup away from the hardened candy and push the bottom of the cup to pop the candy cup out of the baking cup.
4.  Drizzle melted candy onto paper hearts (or other shapes) or free-hand drizzle designs onto wax paper.  Let cool; peel away paper.
5.  Prepare custard (or desired filling).  Fill candy cups.  Decorate by using melted candy to “glue” hearts onto the candy cups.  Hold in place with toothpicks until the decoration and cup are bonded.
6.  If you want to dip a few strawberries, wash and dry them thoroughly first, then dip away!
